ORDERING QUESTIONS

How do I place an order?
Build your boxes on the shop page and send the order through WhatsApp. We reply to confirm the total and the delivery window.
Can I order more than one box?
Yes. Add as many boxes as you like, configure each one separately, and the whole order goes out as one message.
When do orders close?
Friday. The dough rests over Saturday, and we bake and deliver on Sunday.
Where do you deliver?
Noida and the nearby region. Send us your locality and we will confirm.
How do payments work?
Advance payment, confirmed over WhatsApp when we accept the order.
Do you take bulk or corporate orders?

They are not opposites

Chewy is a property of the baked cookie: how much it resists your teeth and then gives. Gooey is a property of the moment: how molten the centre is when you break it open. A cookie can be chewy and cold, or gooey and cakey, or both chewy and gooey for the first hour after baking.

This matters when you order. If a shop promises gooey, it is promising you something about timing and reheating as much as about the recipe.

What makes a cookie chewy

Brown sugar over white. Molasses is hygroscopic, so it holds on to water and keeps the crumb bendy for days. Melted butter instead of creamed butter, which puts less air into the dough. A little more protein in the flour, which builds the gluten network that gives chew its spring.

Then restraint at the oven. A chewy cookie comes out while the centre still looks slightly wet and finishes setting on the tray.

What makes a cookie gooey

A thick dough ball, so the outside sets before the middle catches up. Large chocolate pieces rather than chips, because they stay molten longer. A short bake pulled at the moment the centre is still pale.

Gooey is a window, not a recipe. Every cookie leaves it eventually, and every good cookie can be pushed back into it with ninety seconds of heat.

The bend test

Hold a cool cookie at one edge and lift. A chewy cookie bends a few degrees before it protests. A crisp one snaps. A cakey one bends and stays bent. This is the fastest way to find out what you actually prefer, and it works in any bakery.

A cookie goes stale by losing moisture to the air and by its starch recrystallising. An airtight box slows the first and room temperature slows the second. A tin, a lidded jar or a zip bag all work; a paper bag does not.

Keep flavours separate if one of them is strongly aromatic. Coffee and Biscoff will lend themselves to a plain cookie sitting next to them within a day.

Why the fridge works against you

Refrigerators are dry by design, and cold butter is hard. A cookie that spends a night in the fridge comes out firmer and flatter in flavour, and it does not fully recover at room temperature. The only reason to refrigerate a baked cookie is a filling that needs it.

Freezing: dough beats baked

Portioned dough balls freeze well for up to three months and bake straight from frozen with two or three extra minutes. You get a fresh cookie instead of a defrosted one.

If you must freeze baked cookies, wrap them individually, and warm them before eating rather than thawing them on the counter.

Bringing one back

A hot oven or air fryer for a few minutes brings a cookie back closest to fresh. In a microwave, twelve to fifteen seconds is usually enough; longer turns the sugar to toffee and then to glass.

Four questions

When was this baked? A good answer is a day, not a week. Is the fat butter? A cookie made on vanaspati or margarine tastes flat and coats the mouth. How does it hold on day two? Ask, and see whether the answer is specific. How far did it travel? Every hour in transit costs texture.

Anyone baking properly will enjoy being asked these. A shop that cannot answer the first one is selling stock, not a batch.

Freshness beats reputation

Between a famous recipe baked four days ago and a competent one baked this morning, the morning one wins almost every time. Sugar and butter are forgiving; time is not. This is the single reason small weekly bakers can outperform larger kitchens in the same city.

Where we fit

Rango's Bakes runs one batch a week. Orders open Monday and close Friday, the dough rests over Saturday, and we bake and deliver on Sunday. Six flavours, boxes of six, advance payment, Noida and the nearby region.

The trade-off is honest: you cannot order a cookie from us on a Tuesday evening and eat it on Tuesday night. What you get instead is a cookie that is hours old when it reaches you.
